Heading out to do your grocery run and thinking of new meals to surprise the family with? You’re in luck! Here are three of our all-time favourites with canned foods.



BEEF MINCE THREE WAYS
TOTAL TIME: 45 minutes
SERVES: 6-8

INGREDIENTS
Saucy beef and bean mince
1 Tbsp oil
1 onion, finely chopped
1 red pepper, finely chopped
1 tbsp butter
3 cloves, finely chopped
1 kg beef mince, broken up
2 tbsp tomato paste
1 tbsp sugar
1 cup beef stock
1 tin tomatoes
3 Bay leaves
Handful coriander
1 tin kidney beans
1 tin cannellini beans
Handful parsley
½ lemon
Salt and milled pepper

METHOD
Place oil into a pot over medium-high heat.
Add onion and red pepper, fry for 3 minutes until golden and slightly softened.
Stir through butter and garlic, fry for 1 minute until fragrant.
Add mince, stir thoroughly to break up, then allow to sit for 3 minutes until caramelized.
Add tomato paste and sugar, stir through to distribute.
Add stock, bay leaves and coriander. Cover and simmer for 15 minutes.
Add beans, stir through and finish off with parsley, a squeeze of lemon and a generous season.


BEEF MINCE MACHOS


INGREDIENTS

1 x batch saucy beef and bean mince
Handful basil leaves
¼ cucumber, thinly sliced
4 radishes, thinly sliced
Chilli flakes, to sprinkle
1 packet nacho chips

METHOD
Add beef mince to a few serving bowls, top with basil, cucumber, radish and sprinkle with chilli flakes. Serve with crispy nachos.


BEEF MINCE ENCHILADAS


INGREDIENTS
1 x batch saucy beef and bean mince
6 tortillas
1 cup each cheddar and mozzarella
1 tbsp parsley, finely chopped

METHOD
Preheat oven to 180°C.
Add ½ – ¾ cup beef mince to each tortilla, roll each up gently and place seam-down in a greased round baking tray.
Finish with a sprinkle of the cheeses and parsley, bake for 15-20 minutes until golden.


BEEF MINCE BUNNY CHOWS
1 x batch saucy beef and bean mince
2 x unsliced white bread loaves, halved and hollowed out
Sour cream, to serve
4cm cucumber, grated

METHOD

Add spoonfuls of beef mince to bunny chows, top with dollops of sour cream and grated cucumber.
